Our Fourth of July weekend salad came from Nancy of A Winelover's Wanderings. Nancy gave us several different recipes plus a link to others on Watermelon.Org so basically, we had the freedom to do our own thing which was fun!
I looked at a bunch of recipes and ended up going with a version from Nigella Lawson that starts with soaking red onion in lime juice to mellow it out and add some tang to the salad. I let it soak in the fridge for about 30 minutes and then added the onion and the juice to the watermelon chunks and kalamata olives, fresh parsley and mint, feta cheese, olive oil, and some freshly ground black pepper. I could not stop eating this stuff! It's such an odd assortment of ingredients but is a combination of flavors that really works.

Watermelon Salad with Feta and Kalamata Olives
1 small red onion
Juice of one lime
Slice onion thinly and soak in lime juice for 30 minutes or so. Then add the onions and juice to the following:
Watermelon chunks
Fresh parsley
Fresh mint leaves
Pitted Kalamata olives
Feta cheese
A drizzle of olive oil
Freshly ground black pepper

Hi Annie, your salad looks really delicious. I also think it is very cool we have several choices to pick from too and I love that link.
I can't wait to make mines this afternoon. I might make the Watermelon Fresco Salad. But we'll see...

Great idea to soak the onion in lime juice. I was lucky that my onions were very mild, otherwise I think they really could overpower the salad. I loved this salad.

Annie, I would NEVER have thought to combine these ingredients, but as I try to imagine the flavour mix, I can see how it would be delicious. I always enjoy mixing the unexpected, so will be keeping this in mind for a hot summer day (if we ever have any!) I almost always have kalamata olives and feta on hand, so will just need to pick up some watermelon and fresh mint. Yum - thanks for this great idea!!
