I had a lot of feta cheese from Costco that I wanted to use, so I googled and read a bunch of different recipes for various dips and spreads, and then came up with my own (recipe is below). The tomatoes I used were dried (not packed in oil) and the cheese was real feta from Greece. It came out great! I served it on cucumber slices but it's also good on crackers or pita chips. Quick and easy to make too.

Sun-dried Tomato and Feta Spread
1 cup feta cheese (I used Kolios brand)
1/2 cup sun-dried tomatoes (dry, not packed in oil)
1 clove garlic, minced
Juice of 1/2 of a lemon
A few leaves of fresh basil
Olive oil, as needed (1/8-1/4 of cup)
Splash of hot sauce
pinch of sugar
Salt to taste
Soak the sun dried tomatoes in hot water for about 15 minutes to soften and then drain.
In food processor, combine and chop the cheese, tomatoes, garlic and basil. Add the lemon juice, hot sauce and sugar, and pulse briefly. Add olive oil until you get a spreadable consistency. Taste for salt (depending on the feta, you might not need any).
Good the first day and even better the next.
Serve on cukes, crackers, pitas, whatever.
