Sunday Salad Samplers # 8:Shrimp Salad

This week's salad recipe was chosen by Jan of Keep Your Feet in the Street blog. It is the perfect salad for a nice summer day or evening. It is also very easy to make, I actually(for the first time) had all the ingredients on hand, and chances are I will have them most of the time, so I know I will be making this delicious and refreshing salad again.

Here is what Jan says about her recipe:

Simple, summery and good.

Shrimp Salad

1 pound extra large shrimp (16-20)fresh, wild if you can find them.
1 tablespoon Old Bay seasoning
¼ cup mayo
1 tablespoon ketchup
1 teaspoon Dijon mustard
1 tablespoon chopped fresh dill, tarragon or parsley.
1 large stalk celery chopped
¼ large red pepper chopped
salt and pepper

Steam the shrimp for about 5 minutes in water with Old Bay.
When cool enough to handle, remove shells and chop into about 5 or 6
pieces per shrimp.
Mix the rest of the ingredients in a medium bowl. Toss in the chopped shrimp and chill.

Serve over a bed of lettuce of your choice.

I added more mustard for an extra kick.I also made the salad the night before and allowed it to chill and soak overnight, then served it over lettuce romaine, with a side of baked potato(it was after a day hike, so we needed the extra calories). It was delicious! We actually had it for dinner and then lunch the next day.

I loved it too. Quick and delicious! I will look for Old Bay as I did not have that and substituted with Herbes de Provence.

Candi-The shrimp salad looks great. I can't wait to make it. I've been enjoing reading the posts about your trip-I'm so glad you two had a wonderful time.

The beauty of this salad is that the ingredients are pretty basic and can be whipped up easily. I know I'll be making it often during the summer.

We loved the salad too, but we were little piggies and ate it all at one meal. No potato, though, so maybe that's not so bad.

I'm going to make this this week but I have a question. What is Old Bay? Is that easily found in the markets?
I see Eden substituted Herbes de Provence. I don't have either in my cupboard. The search is on. Looks delish.

I actually had most of the ingredient as well, did need to buy shrimp. I think this will be a good and quick one for dinners in the later summer heat.

Old Bay is a delicious spice mix for seafood steaming.broiling and grilling. It should be found at most stores in the fish and seafood section normally.
You will love this salad.

Looks wonderful and I bet it was great with a baked potato.
