
This week's salad comes from Sandi from the Whistlestop Cafe fame. She chose potato salad and was generous to share two versions with us.
This is what Sandi says:
I know there are as many recipes for potato salad as there are kinds of potatoes. This is a recipe that is a combination of a southern potato salad and a german mustard potato salad. It is a favorite for us!
Southern Mustard Potato Salad
1-2 pounds potatoes
4-5 hard boiled eggs
1 sweet onion, diced
1/2 cup diced celery
1/4 cup pickle relish
3 Tbs spicy mustard
1/2 cup mayo
Clean potatoes then boil them whole. Once tender, 15-20 minutes, remove from heat and allow to cool. Dice onion and celery. Dice potatoes into large chunks.
In another bowl whisk together mayo, mustard and pickle relish. Add kosher salt and fresh ground pepper to taste. Stir all ingredients together. Finally, peel and slice the hard boiled eggs and stir those in as well. Serve warm or cold.
Another favortie potato salad is this one from my cookbook...
Warm Potato Salad
1 pound red potatoes
4 green onions, chopped
1/4 cup non fat sour cream
2 Tbs vinegar
1 tsp cracked black pepper
1/4 tsp salt
Wash and cook potatoes whole until tender.Drain and allow to cool. In a large bowl, combine sourcream and vinegar. Slice the potatoes into thin slices. Combine all ingredients. Salt and Pepper to taste. Serve warm.
Even though I love potatoes, I am not a potato salad fan. I think it is the mayonnaise flavor in the salad is what I don't care for. I can only handle mayonnaise in very small doses, I never put it on a sandwich or a burger, I may use it in some recipes, more for consistency ,if its flavor is masked enough. So I was thrilled to see that I can enjoy a potato salad without mayonnaise in Sandi's warm potato salad. Just as much as I don't care for mayo, I love sour cream, and I am normally guilty of using more sour cream than the recipe calls for:)

I thought I had green onions but they somehow vanished, so I used red onions. I also used white wine vinegar.
We absolutely loved the warm potato salad. It is delicious, easy to make, goes with pretty much anything, and it is served warm. I could have just had it for dinner, it is definitely comfort food.
Thanks Sandi, I can now say that I love potato salad.

I also made the Warm Potato Salad. Wasn’t it great? Like you, I'm not a fan of mayonnaise. I much prefer sour cream or plain Greek yogurt.

This is a good one to keep in mind when you have enough time to make it, but not enough to cool it.

Hi Candi, your salad looks very delicious. I loved the Southern Mustard salad because I don't mind mayo, but I also want to try the Warm Potato Salad too. It looks really delicious! I also thought it was great that Sandi gave two different salads to choose from.
