With an attempt to catch up with Sunday Small Bites, I am combining week five ingredient(goat cheese) chosen by Nancy, with this week's ingredient smoked salmon, chosen by Marcia.
I found this recipe in Bon Appetit, December 1999 issue.I love the combination of goat cheese and smoked salmon, and adding the tarragon and fennel seeds make this appetizer a definite winner.I halved the original recipe, below is my adapted version.
Smoked Salmon, Fennel, and Goat Cheese Toasts
4 oz soft fresh goat cheese
4 teaspoons chopped fresh tarragon
1 teaspoon fennel seeds, finely crushed
1 teaspoons grated lemon peel
1/4 teaspoon ground pepper
1 tablespoons olive oil
8-10 slices of baguette
6 oz thinly sliced smoked salmon

Preheat oven to 350F. In a small bowl, combine the first five ingredients and blend. Set aside.
Brush oil over both sides of the bread and arrange on a baking sheet. Bake until crisp, about five minutes per side.
Spread cheese mixture over toasts, and top with salmon, trimming to fit.
Arrange on a platter and serve!
Enjoy!

Candi-These look really good. I also love goat cheese and smoked salmon together, and I'm sure with the fennel and tarragon they're extra special.

As I was looking for salmon ideas, I kept running into goat cheese, so I think they make a great pair.
