It was Deborah's turn this week to choose the ingredient for Sunday Small Bites, and she chose pumpkin.Honestly, I am not a pumpkin kind of girl, and I can count on one hand the times I've had pumpkin in my life, and it is normally in a pie. So, I decided to challenge myself and make something different. Searching the internet, I came across a recipe for pumpkin bisque on Cooking With Pumpkin website.and decided to give it a go.Below is my adapted recipe:
Pumpkin Bisque

Olive oil
1 medium white onion (diced)
1 garlic clove diced
2 cups pumpkin puree
4 cups chicken stock
Bay leaf
Pinch of sugar
1/2 tsp. of curry powder
Pinch of nutmeg
2 cups half-and-half
Salt and pepper
Toasted shredded coconut
In a large pan,heat the olive oil and saute the garlic and onion slowly. Add the pumpkin puree, chicken stock and the rest of the ingredients listed until the half-and-half. Bring to boil then turn heat down and let simmer for about twenty minutes. Add the half-and-half and simmer for another ten minutes. Add salt and pepper to taste and then serve with toasted shredded coconut.
I served the soup in a small toasted pumpkin with pita wedges. We loved it!

Your Pumpkin Bisque looks great!
I think I chose a Pumpkin Cheese soup last year during "my week" with the Sunday Slow Soup group. We loved it.
But, good for you for expanding your pumpkin horizons.
