Sunday Slow Suppers #2: Squash, Pepper, Chard, and Corn Stew

Continuing with week two of Sunday Slow Suppers, Shannon shared her go-to stew recipe. She said: "It makes me feel healthy just eating it, and it is delicious too." I agree, a very healthy vegetarian stew; loaded with vitamins and flavors. Here is Shannon's recipe:

Squash, Pepper, Chard, and Corn Stew

1 medium onion, diced
3 – 5 garlic cloves, chopped
¾ pound banana squash, peeled and cut into pieces about ½ inch wide
2 – 3 T olive oil
1 t. Greek oregano
1 green pepper, diced
1 red bell pepper, diced
1 T. flour
2 T. chile powder
½ t. cumin
1 c. dry white wine
2 c. broth of choice
3 – 4 c. tomatoes, diced
½ bunch chard, blanched and cut into ribbons with the tougher stems cut away
1 ½ c. frozen corn
¾ c. sour cream or yogurt to taste
Chopped cilantro and green onions for garnish

Very lightly sauté the onion, garlic and squash in oil in a dutch oven or heavy-bottomed soup pot, then add oregano, red and green peppers, flour, chile powder and cumin. Stir together and cook for a minute or two longer.

Add wine, broth, and tomatoes, then cover and simmer for 30-45 minutes. Add chard and corn, then cook for a further 15-20 minutes.

Taste for seasoning. If stew is too liquid, pour off liquid into a small saucepan and boil down until reduced and richly flavored.

Just before serving, stir in sour cream or yogurt. Serve sprinkled with cilantro and green onions.

I made this stew Thursday night, when we had rain and tornado warnings all day (yes, here in Jacksonville). I mainly stuck to the recipe, except I had some celery in the fridge that I needed to get rid of and used in the stew. I also used butternut squash and used the whole thing. I sauteed the onions, garlic and squash, added the peppers, flour and spices, and then added all the vegetables at once and transferred the pot to the slow cooker base, set it to simmer mode and left with Bill to our swing club (dancing). Came home an hour and a half later to a deliciously smelling and looking stew. I fixed some white rice and served it with this stew, after adding a bit of sour cream. We enjoyed it a lot! I thought about halfing the recipe, but I am glad I didn't, because we've been enjoying the leftovers. Tonight we had the stew with biscuits, and it was still delicious! Thanks, Shannon.

Whoa - a tornado! Glad it didn't hit. And swing dancing! Sounds like fun :)

This looks really yummy and not too hard to make (except for all of the chopping).

I have not mentioned it yet and do not want to hurt the feelings of those that came up with it, but I must say that this new raw meat logo is not very appealing as a non red meat eater. I have been quickly scrolling down to avoid looking at it while reading everyone's recipes and reactions the past two weeks. Ironic seeing the red meat question mark with the vegetarian meal this week.

girasoli,I don't eat red meat either, but I find the logo a hoot. Maybe I should go back to putting at the end of the post, this way you won't have to see it and can just stop the screen before it reaches it? I think I'll try that.

But yeah, I think the tornado did hit northern of us. It was really weird, and I never knew Florida gets tornados, actually even people here were surprised with the tornado warnings. The good thing, it didn't last too long, it started about nonnish and ended by about five or six. The weather is doing really weird things.

I agree with you about being happy about the leftovers. This was a great stew!

I loved the leftovers too. Girasoli's comments about the logo made me smile, sorry ... although I agree it may be a real turn off for non red meat eaters.

Hi Candi, your stew looks really delicious. Now I really miss being in the cooking group. I love that it is a vegetarian dish so I may have to try it even though I'm not in the group. I think leftover stews are excellent.

I'm sorry to hear about the tornado warnings. I hope there's no more of that.

I also think it's cool that you and Bill go Swing dancing. How fun!
