It's now Spring, and time to move away from the weekly endeavor of making soups. It is now onto salads. Today begins the first week of our new Spring/Summer Endeavor- Sunday Salad Samplers.
This week our recipe was chosen by Eden of My Blog: Wanderings and Wonderings. Her choice is a lovely green salad with a variety of fruits. Eden posted this on her blog recently, and we all thought the salad looked so good and fresh that we were happy she chose it. The reason it is named "Foraging the City Salad" is because it can be quite a challenge to find blood oranges. I was not successful. I did find Cara Cara oranges, which also have a nice pink color and are very sweet.
Eden says she doesn't really have a recipe for this salad, but here's what she suggests:
Some greens - use your favorite or a combination of favorite greens
Blood Oranges - at least two or three if they are small
Berries - she uses yellow and red raspberries when available
Dried Cranberries - she loves them, and uses them if she has on hand
Crumbled cheese - like Feta
Roasted candied pecans
Croutons, if you wish
On your salad plate or your serving bowl, start with a bed of greens. continue by assembling the ingredients on top.
Just before serving, you can add the cheese and your favorite salad dressing.
For my salad, I used arugula for the greens. I added oranges, blackberries, stilton cheese(the variety I had on hand contained dried apricots) and candied pecans. I made a dressing using a fabulous French raspberry vinegar, some Maui onion mustard, olive oil, and salt and pepper. I fix salads similar to this quite often, with oranges, cheese, and pecans, but I don't think I've ever added berries. They gave another layer of flavor that was wonderful.
