Fridays are staff treat days at our school site. We (in duets or trios) sign up to bring treats three times during the school year. So last Friday was one of my treat days. I usually bake something breakfast'y", make a salad, and make some main dishes for lunch, bake sweets, etc. Since I went to attend a Pre-SlowBowl GTG the night before, I did not have much time to prepare for my treat day.
I looked in my cupboard and freezer when I got home at 10:30PM from Darci's and started thinking what would be an easy thing to put together.
I found that I had some or most of the ingredients that I can use for making that Turkey Mexican Soup that Jerry made some months back. I tried making it before minus a couple of ingredients because I could not find chipotle anywhere. (I was very excited to find a small can of Chipotle in Adobo Sauce at my local Safeway a couple of weeks back, that I snagged some cans.) So now, I can make that soup with my new found chipotle.
Relying on my memory, I started putting things together, turkey broth, roasted corn, etc... I was modifying it a bit... and happily added the can of chipotle peppers. I decided to make this in the crockpot so I won't have to watch it boil and simmer....
After about an hour of low simmering, I went to check and taste before heading for bed. HOLY S$#@! The soup was HOT! And I do not mean fire hot... Chipotle Pepper HOT!.
So I decided to look for Jerry's recipe and found out that I only needed to add a teaspoon of chopped chipotle... not a can! So I fished out all the peppers that I dumped in there.
Arrrrggg, I did not make it to bed right away after that tasting bit. I had to empty half of the soup, added more water and broth... and saved the other half for future use.
The soup was still delicious even after that near-fiasco. I served the crockpot full with a huge sign that said "SPICY HOT". The toppings included sour cream, guacamole and chopped avocados, blue tortilla chips, and shredded cheese. The crockpot was empty in no time!

Oh Eden, I have to laugh. It sounds like something I'd do. I once used way too many habaneros in a salad and had to throw the whole thing away (it was deadly). I'm glad you were able to save yours!

A whole can? HOLY S$#@ indeed!! Obviously was very tasty in the end, since the pot emptied so fast.

Oh no! Eden, I've done things like that too. Glad you were able to save the soup, and your co-workers enjoyed it!

Eden-That is so funny. I can't imagine how hot it must have been-I don't think I would have been able to eat it.

I'm not a souper but I made this soup with shrimp (following Marta's recipe) and it was delicious. I started talking to the monitor saying no no no when I read the part where you put the entire can of chipotle in adobo. I use them regularly and they are extremely HOT. Good thing you were able to save the soup. Your photos are great.

Eden, I could really relate to this...been there done that. In my younger days I probably could have taken it in small doses. These days I do like spicy but take it easier on my tummy.
Still a relateable story and a chuckle.
