Cream of Artichoke Soup

I love artichokes so I decided to join in on the last Slow Souper choice and made some Cream of Artichoke Soup. This recipe is from Ida -

Before Picture - The whole, fresh artichoke is just a prop, I did not use it with the soup. :)

3 T. butter
4 T. minced shallots
1 and a half T. flour
3 and 1/2 cups Chicken Stock
3 cans of artichoke quarters in water (drained)
1 cup half and half
Salt and Pepper

Melt butter in a skillet over medium heat, allowing it to brown just lightly. Add shallots and saute briefly till softened . Stir in flour and cook 2 to 3 min.

Heat stock or chicken broth in a 2 qt. saucepan. Add flour mixture, stirring constantly.Cook over medium heat until slightly thickened, about 3 to 5 min.

Add chopped artichokes to thickened chicken stock and half n half. Blend thoroughly with an immersion blender. Season with salt and pepper.

I heated the artichoke hearts a little bit before pureeing. In the stockpot -

Final product, topped with a few oyster crackers and few green onion bits.

Like the prop, glad we weren't working with those babies, tho.

I haven't made this one yet but it looks delicious!

Eden, I am not a Slow Souper either but I am going to try this recipe. I love artichokes and it looks wonderful!

Mmmmmm, artichokes made into soup! That's a cool idea. It looks dee-lish!
