Is there anything better than late summer tomatoes? I just made this Caprese Salad for lunch and I have to say that every bite was perfect. Do not even think about making this salad unless you have drop dead ripe tomatoes. And you really should go to a fancy cheese store and get real, fresh, buffalo mozzarella. There is nothing like it. Fresh basil is a must, of course. And finally use some delicious olive oil and a liberal sprinkling of salt and freshly ground black pepper. It is a salad for late summer. With only a few more days of summer left, it is a salad to savor and enjoy.
