And here it is many weeks later and I am still playing soup catch-up. Not only am I late in making some of these soups, but I am even worse when it comes to posting. New Year's Resolution is to try and stay on top, but for now, I will just post some results.
Since we were not in town for Pumpkin Soup, I decided it would wait until our traditional Xmas Eve dinner, as a first course to the roast beef, Yorkshire pudding, spinach, etc. And since it turned out to be a dark and stormy night in sunny SoCal, the soup was a very good choice.
Our table of family and friends thought it was good, as did I, but it had more of a harvest flavor, the pumpkin not being all that strong. It might have been the slightly heavy thyme, but whatever it was, we all liked it; I thought the leftovers for lunch later that week were actually better.
