Sunday Slow Soupers #9 - Leek and Asparagus Soup with Fried Leeks and Crushed Amaretti

Whew, I think it took me longer to type the title of this than it took to make. Seriously, this was a really tasty vegetable treat (pardon the pancetta); I only wish the market asparagus had been fresher and greener. And I am really glad I went the extra mile to search out the amaretti cookies and fry up the leek garnish, because those were the proverbially frosting on the cake, or bowl in this case. I made it ahead of our weekend trip, brought a container to one of the daughters, but once again, here I am playing blog catch up.

So it started out like this:

When the leeks and potatoes had finished sauteeing, the asparagus, broth and seasonings were added:

Frying up some leeks:

And then there was soup; next time I would use more asparagus for a greener look and taste.

Just had some for lunch....hmmm hmmm good! I do think it needs something crunchy on top, but frying up leeks in the office kitchen just wasn't going to happen....maybe for my next bowl.
