Oh this was so easy and so delicious. Thanks Anne for the recipe. We were in Sacramento this past weekend visiting the baby and his parents, and our other children, who either live there or came for the weekend. I decided to make the soup for them, so it was fun to use someone else's kitchen, and dishes for pictures, as well as a treat to be feeding a crown for a change, instead of our usual soup for 2.
I am going to pass on posting the recipe right now, because I would like to get this post up and running today. But it started with the following ingredients:

First step is to dice and saute the vegetables in olive oil:

Then add the broth and shredded potatoes and simmer for 20 or so minutes until the potatoes are tender. Then you add the gravy mix to thicken the soup.

I decided to serve the soup with a toppings bar, as we were eating this rather casually over the afternoon and not as a sit down course:

It really was a delicious soup:

But I am looking forward to French Onion Soup next week - beef broth, a real change!
