Salad Samplers #8 - Shrimp Salad

Jan (jgk) in Florida gives us this week's salad, which she says is "simple, summery and good". All of this is very true, although the California June gloom finds us eating it for lunch on a rather overcast afternoon.

I believe I was ordained to make this salad, because last week a sample package of Old Bay seasoning came attached to the morning paper.

This is how we started this week:


Shrimp Salad

1 lb extra large shrimp (16-20), wild if you can find them (I could only find smaller shrimp but they worked out fine, I simple cut them in half).

1 Tablespoon Old Bay seasoning
1/4 cup mayo (I used a 6 oz container of plain yogurt)
1 Tablespoon ketchup
1 Tablespoon Dijon mustard
1 Tablespoon chopped fresh dill
{I added a teaspoon of prepared horseradish and @ 1/2 teaspoon grated lemon peel}

1 large stalk celery, chopped {I used 2}
1/4 large red pepper, chopped
salt and pepper

I decided to make the dressing first, which then went in the refrigerator to blend the flavors.


Steam the shrimp for about 5 minutes (4 with the smaller shrimp) in water with Old Bay.


When cool enough to handle, remove shells and chop into 5 or 6 pieces per shrimp {with the smaller shrimp 2 pieces per shrimp was a good size}.

Mix the rest of the ingredients in a medium bowl.


Toss in the chopped shrimp and chill. Serve over a bed of lettuce of your choice.

Done and done - simple and delicious.

No Old Bay attachment to my morning paper so I did not have that... Your salad looks delish.

I substituted Old Bay for Herbes de Provence. I had it in the cupboard. :) It still turned out great with substitutions.

Your salad looks wonderful. I think that is so funny that the sample of Old Bay came on the week you were to make this salad. Hope you're about ready for your trip-I'm sure you'll have a great time.

Your salad looks yummy! I made the dressing with equal parts sour cream and mayo. Next time I'll try it with yogurt. I don't like mayonnaise too much but my husband loves it in salad dressings and sandwiches.


I think I will do sour cream and/or yogurt next time and see how it compares to the mayo.

Yogurt sounds like a good substitute. Maybe I'll try again on this one.

This sounds great. I like the idea of using yogurt instead of mayo. Your photos also are great.
