
Sun-dried Tomato Basil Swirls
This week’s inspiration was “simple”, what with preparations for and observance of Rosh Hashonah, the Jewish New Year. I also wanted something I could take to a weekend picnic. This recipe is a variation of one I found on a box of puff pastry in the freezer, and I used ingredients that I had in the house, other than the sun-dried tomatoes. Even though we have no humidity to speak of on this coast, drying my own tomatoes was apparently not on my culinary radar, but how cool that some of you thought to do this.

Ingredients
½ of a package of frozen puff pastry sheets ( 1 sheet)
1 egg
1 Tblsp.water
¼ cup sun-dried tomatoes, sliced thin
¼ cup mozzarella or feta cheese
¼ cup prepared pesto (I used some from this year's freezer stash)
¼ cup grated Parmesan cheese
Directions
Preheat oven to 400 degrees. Lightly grease 2 baking sheets or line with parchment paper.
Thaw pastry sheet at room temperature for 40 minutes; while pastry is thawing prepare the filling:
Using a mini-chopper, chop tomatoes with the mozzarella or feta (use what you have on hand); add pesto and blend. Set aside. Stir egg and water in small bowl.
When pastry is thawed, unfold on lightly floured surface. Brush with egg mixture. Top with tomato-pesto mixture, then sprinkle Parmesan on top. Starting at short side closest to you, roll up like a jelly roll. Cut into 16-20 slices. Place slices cut down on baking sheets. Brush with egg mixture.
Bake 12-15 minutes or until golden, watch carefully at 12. Serve warm or at room temperature.

This looks very good and no too complicated to make. I love finding inspiration on the recipes on the box of phyllo and pastry dough.
