Polenta Bruschetta with Pesto Goat Cheese

I spent a lot of time this week looking at goat cheese recipes, and in the end I put together a few ideas from a few recipes to get this one; up to the day before the bruchetta mixture had been a tomato slice in my head. Again this is a recipe that can translate into a small bite (with plate and fork), or an appetizer (two on a plate), or for us, it was Saturday lunch. This morning the pesto goat cheese and bruschetta became toppings on sourdough toast.
Polenta Bruschetta with Pesto Goat Cheese
Ingredients
1 tube prepared polenta
4 oz. goat cheese
3 tsp. pesto
2 tsp. half and half
1 cup chopped tomatoes (plum, cherry, Campari)
1 Tblsp. olive oil
1 Tblsp. minced basil
2-3 cloves chopped garlic
Salt and pepper to taste
¼ cup toasted pine nuts
Prepare tomato topping by combining tomatoes, olive oil, basil, garlic, and seasonings in small bowl, set aside for 2 hours to marinate.
In mini-chopper, combine goat cheese, pesto and half and half, set aside.
Slice polenta into 12-16 slices, depending on preference; heat griddle or frying pan with small amount of olive oil, add polenta slices and cook until lightly browned. Set aside to cool slightly.
To assemble
Spread scant tsp. of cheese mixture on top of polenta slice, top with tomato mixture and add a few pine nuts to top. Serve at room temperature.
Serves 6-8, two slices make a small plate appetizer.

And now we move onto smoked salmon, my ingredient of choice - wondering how many of these recipes will be suitable for Small Bites brunch, just a thought today.

Looks great! I was also thinking that lots of these dishes could be brunch items.

This looks like a great recipe, I love all of the ingredients, and it looks pretty easy to make (although I would probably be lazy and use pre-made pesto). I'm copying this recipe to try someday. :)
