Easy Fat-free Apple Cake


Apple cake always feels like fall. I have several good ones, but this is quick, easy, and has no butter or oil. I dug around for this old recipe I hadn't made in ages.

Preheat oven to 350 degrees.
Grease a 13x9-inch baking pan.

Mix together in a bowl:
1 cup all purpose flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

2/3 cup milk

1 egg

In another bowl, combine:

4 apples (3 c.), peeled and sliced

1/2 cup chopped pecans

1/2 cup raisins
1/3 cup sugar

1 teaspoon cinnamon

Spread batter mixture into the greased baking pan. Sprinkle fruit/nut mixture evenly over the top of the batter.
Bake for 30 – 40 minutes until edges are a light golden brown and the apples are tender.
