Carrot Orzo(from Bon Appetit March 2007)
2 T. butter
6 oz. baby carrots, fined chopped
1 c. orzo
1 1/4 chicken broth
1 1/2 c. water
chopped green onions (I didn't have any, so I left this out)
1/4 c. grated parmesan cheese
Finely chop carrots in food processor. Melt butter in medium saucepan. Add carrots and orzo, and let cook for 5 minutes. Add water and broth, salt and pepper to taste, and stir. Let cook 10-12 minutes until all the liquid is absorbed. Stir in parmesan and green onions, and serve.
We had ours with some crispy baked crab cakes from my freezer.
