
Carrot Orzo(from Bon Appetit March 2007)
2 T. butter
6 oz. baby carrots, fined chopped
1 c. orzo
1 1/4 chicken broth
1 1/2 c. water
chopped green onions (I didn't have any, so I left this out)
1/4 c. grated parmesan cheese
Finely chop carrots in food processor. Melt butter in medium saucepan. Add carrots and orzo, and let cook for 5 minutes. Add water and broth, salt and pepper to taste, and stir. Let cook 10-12 minutes until all the liquid is absorbed. Stir in parmesan and green onions, and serve.
We had ours with some crispy baked crab cakes from my freezer.

The color of this dish is really pretty. I'll have to check to see if I have any orzo in the pantry. I have a lot of carrots I need to use.
