We've been eating out of the freezer for a couple weeks to make room for cookies! I had two pork boneless loin chops defrosting, that I needed to decide what to do with. Hmmmmm, there were those leftover Trader Joe's gingersnaps that I used for crumbs. I wondered.
I smashed the remaining dozen cookies, and mixed them with some panko. I cut the pork chops in half horizontally, and pounded them into four thin cutlets. Dipped in egg, then the crumbs, and fried them in a little olive oil! YUM!
I served them with baked, stuffed acorn squash with apples, onion, raisins, and some croutons soaked in broth. It made a warm cozy dinner on a chilly evening.
