Lemon-Almond Tilapia


Try this super-simple way to bake tilapia fillets:

2 tilapia fillets
2 T. lemonade concentrate
1/4 c. ground almonds
1 T. chopped Italian parsley

Pre-heat oven to 400. Spray a baking sheet with cooking spray. Let lemonade concentrate melt for a few minutes. Brush fillets with lemonade, dip in ground almonds, and place on prepared baking sheet. Season with salt and pepper, and sprinkle with chopped parsley. Bake 10-11 minutes until fish is cooked through.
