
Snow??? No!
This was taken from the car window at around 80 mph on Hwy 99 around Bakersfield during last weekend's visit to Fresno.
We had passed several miles of beautiful blooming plum, nectarine, and almond blossoms, but when we went over this overpass, it was like looking down on a sea of white blossoms!
Even on a cloudy day, the orchards were beautiful! And they smelled heavenly.




Well, you knew this would end up with food, right? But who doesn't love almonds?

I decided to make some simple almond cookies.
1 c. unsalted butter, softened
1/2 c. sugar
1/2 c. brown sugar
1 egg
2 t. almond extract
1 c. ground almonds
2 c. flour
Preheat oven to 350. Cream butter and sugars. Add egg and almonds extract. Add ground almonds. Mix in flour. Roll into balls. Roll balls into a small bowl of sugar.

Place on an ungreased cookie sheet and flatten with a bottom of a glass.

Bake for 8 minutes. Cool on a rack and enjoy. These cookies are soft and very "almondy".
