
I had one large artichoke to use for dinner, and wanted to try something different, so I used Giada's recipe for Baked Artichokes with Gorgonzola and Herbs. Basically, you boil the artichoke, then scoop out the center leaves and choke, and stuff it with a mixture of gorgonzola, thyme and parsley, top it with bread crumbs and a drizzle of olive oil, then bake it. We shared one, and it is delicious, making its own dipping sauce.

The artichoke was wonderful with BBQ chicken thighs. Here is my BBQ sauce:
1/4 c. dijon mustard
1/3 c. honey
2 T. Asian chili sauce
1 T. olive oil
1 t. curry powder
1-2 t. freshly grated ginger
2 cloves minced garlic
a sprinkle of red chili flakes
Salt and pepper chicken thighs, breasts, or a cut up chicken. Grill 10 minutes on each side WITHOUT sauce. Then baste with sauce and grill another few minutes on each side.

That artichoke looks so good-I may just have to make it for myself-J. doesn't do any blue cheese!
