Green Beans with Pancetta, Sage & Pine Nuts


It is no secret that I hate beans. This is true for all beans EXCEPT green beans. (I think it is about the mealy texture.) I happen to love fresh green beans. Here is my favorite way to prepare them.

Clean and cut the beans in half. Blanch them in boiling water for 1-2 minutes. I like them still a little crisp. In a skillet, cook 2 oz of chopped pancetta in 1 T. of olive oil. Add lots of chopped fresh sage. Add drained, cooked beans, pine nuts, and toss, stirring for another minute. YUM!

We had ours with grilled pork chops with balsamic reduction, and some creamy polenta.
