We had an abundance of guests last week and weekend, which means some baking. I made a simple lemon cake. You can use your favorite lemon cake recipe, or even a mix, but bake it in one thin layer in a half sheet baking pan. When it is cool, cut out circles with a round cookie cutter. I got 16 circles from the cake, and wrapped the ones I wouldn't need in plastic wrap. Into the freezer they went.

Brush tops of cakes with limoncello.

Beat one cup of heavy whipping cream. Combine it with one jar of homemade lemon curd. Chill for 2 hours. Before serving, spread lemon "mousse" on top of half the cakes. Put another layer on top, and spread with lemon curd (not mousse). Garnish with a lemon slice or berry and serve.
