Salads, Salads, Salads

It is salad time at our house. I love salads for dinner, and I can get Brad to eat them a couple of times a week. These were last week's salads:

BBQ chicken salad with grilled corn, green onions, a little grated cheese, and a light ranch dressing.


This trio included Caesar, fruit and apricot chicken salad with chicken, dried apricots, green onions and a peach yogurt dressing.


My favorite salad of the week was from our lunch stop in Santa Barbara: arugula with toasted almonds, green apples, fried brie, and a dijon vinaigrette.
