It is too hot to cook. When Brad is grilling veggies or chicken, we make lots to have leftovers. Lots of salad nights too. This is one of my favorite summer meals.
Slice some cold grilled chicken, and whip up a quick tonnato sauce in the blender. Puree all ingredients until smooth. This is a quick version. Some recipes used hard boiled eggs and no mayo.
1 can Italian tuna in olive oil
1/2 c. mayo
2 T. capers
1 T. anchovy paste (or 1 anchovy fillet)
1 T. lemon juice
salt and pepper
a big splash of olive oil (less than 1/4 c.)
Spoon sauce over sliced chicken and top with additional capers. YUM
