
Crust:
2 c. graham cracker crumbs
4T. sugar
4 T. butter, melted
Mix ingredients with a fork, and press into a 9" springform (bottom and half way up the sides). Chill until filling is ready.
Filling:
3 8oz. containers of mascarpone
3 eggs
3/4 c. sugar
2 t. freshly squeezed lemon juice
1 t. vanilla
zest from one lemon
Preheat oven to 375. Combine all ingredients in mixing bowl. Beat until smooth and creamy. Pour into crust and bake 40 minutes. Center will still be jiggly. Increase oven temp to 400. Make sour cream topping.
Topping:
1 c. sour cream
1/3 c. sugar
1 t. vanilla
Whisk together sour cream, sugar and vanilla. Spread over center of cheesecake, and return to oven for 15 minutes. Cool on rack. Chill 4 hours or overnight, then top with fresh berries.
