It is just a few days until we leave for Italy, so we are eating out of the fridge and freezer. I had some bread, I had two eggs, and I had peaches. I rummaged a little more. I found a tub of mascarpone with a third left. Hmmmmmmm
I made us each a sandwich of mascarpone and my peach-rosemary jam on thinly sliced "Tuscan Bread". I made them into French toast with the eggs, some milk and a little vanilla. I cut up two fresh, juicy peaches. A Sprinkle of powdered sugar, and we had a gourmet Sunday breakfast!
