I had a very busy day. Now that school is in session, I get busier, as one of the programs I supervise allows the teachers to have free counseling if they request it. Beginning last week, I now drive to Coachella twice a week to see a few clients. That means that on Wednesdays, I work my regular hours, then run out to Coachella (over an hour RT) and back in time for my evening client at home. There was no time for grocery shopping, so I made dinner from what was "around".
Before work, I baked 2 chicken breasts. While pasta was boiling, I made a little bechemel sauce. Then I layered the pasta in bechemel, last week's fresh pesto, the diced, cooked chicken, and a little grated fontina. I topped it with some grated parmigiano and popped it in the oven like Mac & Cheese. Comfort food! Pesto-chicken Mac&Cheese Italian style! While it baked, I made a salad and we were happy campers. I froze the rest of the pan in individual size servings.

are you sure that you don't want to go into the "Take and Go" food business? I live so close that I know I'll be a constant customer!
