
Because some of my cookies are labor-intensive, and fussy with multiple steps or icings or decorating involved, I also need to mix in some "no brainers", or I call them "Cheater Cookies"; cookies where everything goes into a pan and is baked. BAR cookies are the answer! These are great (and EASY)!
Butterscotch-Toffee Bars
1 yellow cake mix
1/2 c. packed brown sugar
1/2 c. melted butter
2 eggs
1 1/2 c. cashews, chopped
8 oz. toffee pieces
Preheat oven to 350. Spray a 15x10 baking pan with cooking spray. Combine cake mix, brown sugar, melted butter, and eggs in mixer bowl. Beat for 1 minute. Stir in cashews. Pat dough into pan. Sprinkle with toffee pieces. Bake 15-18 minutes. Cool and cut into bars.

These are my kind of cookie! Do the toffee pieces have chocolate on them? It doesn't look like it in the photo. I prefer them without.
