1 t. vanilla
3 1/2 c. flour
1 t. baking soda
1 t. salt
1 c. crushed Rice Krispies or Corn Flakes
1 cup oats
1 c. coconut
1 package Heath toffee chips

Cream butter and both sugars. Add egg, oil and vanilla. Add remaining ingredients. Spoon onto ungreased cookie sheet. Flatten with a fork. Bake at 325 for 11-12 min.

OK - you ALMOST had me - til I read about the coconut. Wonder how they would taste without it???

I'll bet you could replace the coconut with nuts or even chocolate chips!

Nancy Laneri:

This is what I call a breakfast cookie. A cup of coffee and 2 cookies, and you're ready for the day! Grazie, Palma, I can't wait to try them.

Barb Cabot:

Palma I have been channeling you...I made the cookies yesterday and I made my first smilebox. Both were alot of fun to do. Eating the cookies with the kids tonight but I must admit i have cheating and eating a few before. So so good. Thank you so much for sharing all these wonderful recipes.
