By the time you're reading this, I will be in Yosemite avoiding the snow. Hopefully, BRAD will take some snow photos, as I will probably be hanging on to him to stay vertical! In the meantime, try the best pancake recipe I know:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk + another 2 T. if needed so batter pours
1 egg
3 tablespoons butter, melted
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Reduce heat to medium. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

The snowman on the left was the first pancake, and I turned the heat down to medium. The rest looked perfect!

I have TONS of snow photos, and the wedding was fun. I still hate snow, and it was colder than I even imagined it could be. I wore EVERY layer I brought, and you wont BELIEVE what I slept in, but we are now loading the car to leave. Let's just say I will never be called "Nature Girl"! Looking forward to mid 60's in Palm Desert, and I can't WAIT to see Luigi in 8 hours!
