
1 lb ground beef
1 1/2 c. grated cheddar
8 slices of crisp bacon, crumbled
2 eggs, beaten
1 T. Worcestershire sauce
1/4 c. bread crumbs
1/4 c. mayo
1/4 t. salt
1/4 t. pepper
1/4 c. BBQ sauce
1 3 oz. can fried onion rings
The original idea for this is a recipe from Paula Deen. I reduced the cheddar and bacon slightly out of guilt, and changed the her catsup to BBQ sauce, also reducing the amount.
Mix together first 9 ingredients. Add 1/2 the BBQ sauce to the meat mixture, and form a meatloaf shape in a 9x5" loaf pan. Spread remaining BBQ sauce on top. Bake at 350 for 40 minutes. Top with onion rings and cook another 15 minutes. Let sit a few minutes before slicing.

Funny that we both posted a meatloaf recipe this wee - apparently some comfort of the culinary induced sort was needed.
Mind you - you had 'the tots' as well - I am jealous! *smile*
