This is a "special" chicken recipe that can be prepped ahead, and takes just 20 minutes to cook. It would make an excellent "company dish".
4 boneless, skinless chicken breasts
8 "sticks" of cheddar cheese 1/2"x1/2"x 2 or 3"
2 T. butter
8 t.. Dijon mustard
8 sprigs of fresh thyme
8 scallions
1/2 c. brandy
1/2 c. cream
salt and pepper
Cut each chicken breast in half vertically to make two long "tenders". Pound chicken into flat cutlets. Spread each chicken cutlet with 1 t. mustard. Sprinkle with salt, pepper and fresh thyme. Cut each green onion into thirds. For each chicken piece, Roll chicken around one log of cheddar and 3 little green onion pieces. Secure with 2 toothpicks. (all of this can be done ahead)
Brown chicken rolls in the butter on all sides. Add brandy to pan, cover, and let cook for 15 minutes, turning once. Remove chicken rolls from pan. Add cream to pan juices and quickly stir to form a sauce. Pour over chicken and serve at once.
