I was inspired by my friend Janie of Panini Girl blog to make some cookies. She used Gina DiPalma's recipe for "Almond Fingers" recently, looking for "Italy in a cookie".
I know Janie LOVES hazelnuts, and she and her husband are visiting this weekend, so I used the same recipe, but substituted hazelnuts for the almonds, omitted the lemon zest, and added some Frangelico. They are great with a cup of coffee for a simple sweet bite.
If we can't be in Italy together, we can at least share a few "Italy in the cookies"!
