I was determined to eat no meat on Good Friday, so we had a nice lunch at our hotel: a crab cake for Brad and a shrimp & crab salad sandwich for me.


That evening, we had dinner at THE HOTEL at Mandalay Bay, at RM Seafood. Upon entering, we saw some gorgeous and simple flower arrangements, all in white:




Two years ago, we watched chef Rick Moonen in an Iron Chef type competition against chefs from Caesar's Palace. He was amazing with seafood, so we decided to give it a try. He wasn't in town, but I am standing with the cardboard figure in front of the restaurant.

We began by sharing a good Caesar salad. Then I tried the lobster bucatini (which tasted just like my mom's) and Brad enjoyed the branzino. We also had some delicious sauteed zucchini.


Then it was time to get back to the Paris to earn some more points gambling!

No meat on Friday - I remember those days! Goes back to our Catholic upbringing, doesn't it?
