
Our group had to be ready EARLY this morning, as the cows wait for no man! Of course I am referring to the PARMIGIANO COWS! By 7:15 we were on a bus to a casificio (dairy) where Parmigiano-Reggiano is made, outside of Modena. The hotel breakfast room, gave us coffee early (they usually open at 7:00), and I provided pastries on the bus.

We arrived at 8:00 for our scheduled group. The first thing we did is "suit up"! I was surprised, as I did not need to wear the protective sanitary clothing last year when I visited a different dairy, but if was certainly a photo op!


We watched the whole process of making the cheese. This was a smaller dairy, and only 8 wheels are produced a day. We enjoyed watching the process.







Of course the BEST part is TASTING and buying the cheese. I bought another 5 kilo to fit in my luggage (after I mail home my clothes)!
