I gave Brad the night off from the BBQ, and turned on the oven. This was a nice change of pace for some baked tilapia.
2 tilapia fillets
2 T. freshly squeezed lemon juice
1/2 c. panko
1/2 c. asiago
handful of chopped Italian parsley
3 T. melted butter
Heat oven to 350. Squeeze lemon over fish and season both sides with salt and pepper.
Place fish on baking sheet. Mix together panko, asiago, parsley and melted butter. Toss well. Place half of crumbs on each piece of fish. Bake at 350 for about 10 minutes.

I made this last night and it was delicious! Didn't have the asiago so used fresh parmesan and it was good and so easy!
