These simple pork skewers are marinated pork, figs and red onion.
Cut a 1 pound pork loin into chunks, or use two-three thick boneless loin chops, cubed into large chunks. Marinade for several hours or overnight.
1/4 c. rice vinegar
1/4 c. orange juice
1/4 c. Dijon mustard
1/4 c. honey
2 cloves of minced garlic
Cut chunks of red onion, and 2 ripe figs per skewer. Alternate pork, onion and figs. Brush figs and onion with a little olive oil before grilling. Grill 3-4 minutes per side.
