Ingredients:
3 1/2 cups flour, divided
1 t. sugar
1 t. salt
1 T. active dry yeast
1 cup water
2 T. olive oil
1 egg
olive oil for brushing plastic wrap and focaccia
Combine 1 c. flour, sugar, salt and yeast, mixing well. Heat water in microwave for 30 seconds and stir in oil. Add to dry ingredients in mixer (or food processor). Add egg and mix thoroughly. Add 1 3/4 cup more flour, a little at a time. Finally add another 3/4 c. of flour, either using dough hook, or turn dough onto a floured surface and knead in flour by hand. Cover dough with a towel, and let rest for 5 minutes.
Preheat oven to 400. Roll out dough to a 12" round and place on a round, oiled pizza pan. Cover with oiled plastic wrap, and let sit for 30 minutes. Poke all over with a fork and drizzle with olive oil. Bake about 16 minutes, or until golden. Cool.
Topping:
1 wedge Cambazola cheese at room temp. Spread it on evenly.
4 slices of prosciutto, torn and arranged on top of cheese
4-5 ripe figs, thinly sliced horizontally

Bake at 375 for about 10-12 minutes until cheese is melted.
