If you LOVE chocolate and hazlenut flavors together, this post is for you. I served a trio of Nutella desserts to my books club friends: Nutella mini-cheesecakes, Nutella mousse, and Nutella Chocolate chip cookies! Here are the recipes:
Nutella Cheesecakes: (I used my indiv. mini cheesecake pan, but this recipe can also be done in a 9x9" square baking pan and cut into 16 squares.)
1 c. chocolate cookie crumbs
1/2 stick (4 T.) unsalted butter, melted
16 oz. Cream Cheese, at room temperature
2 eggs, at room temperature
1/2 c. granulated sugar
1/4 c. heavy whipping cream
1 t. vanilla
1/4 c. Nutella
Preheat the oven to 325 degrees F.
Butter an 8 x 8 baking pan and line with parchment paper, making sure that the parchment is well pressed in the corners. Set aside.
In a food processor, pulse chocolate cookies until they become crumbs. Add in melted butter and pulse until moistened. Press cookie mixture evenly into the bottom of the prepared baking dish. Bake crust in the center of the oven until set, about 10-12 minutes. Set aside and cool.
Clean out the food processor. Add cream cheese, eggs, sugar, 1/4 c. heavy cream, and vanilla extract. Pulse until smooth. Put 2/3 of the cream cheese mixture in a bowl and set aside. Add Nutella to remaining 1/3 of the cream cheese mixture in the processor. Pulse until smooth.
Spread vanilla cream cheese mixture evenly over cooled crust. Top with Nutella cream cheese mixture. Bake for 30 minutes, or until center is not too jiggly. Cool. Cut into 16 squares. If using individual cheesecake pan, it makes 12 mini-cheesecakes.
1 c. Nutella
1 1/2 c. cold heavy whipping cream
1/2 t. espresso powder
1 T. Frangelico Liquore
Place Nutella and espresso powder in a bowl in microwave, and heat in 10 second intervals, stirring until smooth.
Whip cream until soft peaks form. Add Frangelico, and beat a few seconds longer until Frangelico is incorporated. Fold Nutella mixture into whipped cream and spoon into small cups or glasses. Makes 8 four-oz. servings.
Nutella Chocolate Chip Cookies
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup (1 1/2 sticks) butter, softened
1/2 c. Nutella
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups Semi-Sweet Chocolate Chips
1 cup chopped hazelnuts
Combine flour, baking soda and salt in small bowl. Beat butter, Nutella, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips and hazelnuts. Drop by rounded tablespoon or cookie scoop onto ungreased baking sheets. Bake 10 minutes at 375.
