Last year, some of you may remember I began baking cookies and selling large trays of six dozen assorted holiday cookies. By the time I purchased the packaging materials, ingredients and baked over 200 DOZEN cookies, I was exhausted, and didn't make much of a profit. I realized many of my cookies were "Labor intensive", or required lots of time consuming details, steps, decorations or icings. I still have all the large trays, lids and packaging materials, but had ALMOST decided I wasn't going to sell cookies this year, but just make enough for guests and the friends I usually give tins to.
On Wednesday morning, I got an "order" for 10 dozen, and later in the day, another for 6 dozen. It is not even Thanksgiving yet! The 10 dozen lady wants them next week..."Assorted please". Of course we are leaving Wednesday for our Las Vegas Thanksgiving weekend.
I had just finished figuring our my list of what cookies I wanted to bake this year for fun and friends, and making out a grocery list for ingredients from 14 recipes (10 favorites and 4 new recipes). Now it looks like I am back in the cookie business, at least for a few return customers. I guess I better get started TODAY!

Palma, I was wondering if you would be back in the baking business this year. Now that you have made the initial equipment investment, hopefully you should see more profit this year. Speriamo, you deserve it!
