
I am calling these "Assuntina Cookies" because I tasted these no-bake gems at Fontana del Papa.
1. Take two small amaretti cookies, spread Nutella on one and make a little sandwich.
2. Dip these in espresso, and roll in coconut.
Now when I tried ONE, the coconut DIDN'T stick, and I had a tasty little mess that I popped into Brad's mouth.
I tried again. This time I mixed one part Kahlua with two parts Hershey's chocolate syrup.The coconut still didn't stick! Maybe Italian coconut is drier than ours.
I had made 22 of the little sandwiches, so I wasn't giving up! I added about 1/4 c. of powdered sugar to the Kahlua-chocolate mixture, and it WORKED!

Hi Palma..when I tried making them as we were talking on the phone( and I still ate all the failures)I dipped some into thick fudge syrup you put on ice cream and that seemed to also make the coconut stick. I'm going to try the kahlua way of yours maybe later today except if I make one and then eat one ,not great for my diet! LOL

These look delicious! What is the 'shelf life' of the cookies? Must they be refrigerated?

Susan, I have mine in the fridge and they are fine for several days.
