I love to give home-made gifts! Besides those who get my cookie tins, I have some wonderful neighbors on my list of special people I want to give a little something to. I baked these simple Parmigiano "Cookies" (FABULOUS with a glass of wine).
This recipe makes 3 dozen 2" cookies. (I doubled this for 6 dozen):
2 sticks unsalted butter, softened
1 3/4 c. grated parmigiano (or Grana Padano, or Romano)
1 3/4 c. flour
1/2 t. salt
1 t. smoked paprika
Mix all ingredients on low speed in mixer, until dough comes together. (Don't over-mix). Roll out dough on a floured surface and cut out round cookies. Bake on a parchment-lined cookie sheet for 14-15 minutes at 375. Cool.

NOW for the fun part! I saved some Trader Joe's coffee cans, and rinsed them well with hot soapy water. This was easy, as we go through at least a can a week! Cut wrapping paper to fit, and use spray adhesive. Make sure you get the REPOSITIONABLE kind, in case you screw up!

A simple label, or ribbon would do, but for me the fun is in the decorating! I have BOXES of scrapbooking supplies, so I just went to the box marked "Christmas", and had hundreds of adornments to choose from.



Each can easily hold a dozen cookies! Now I get to deliver the goodies!
