This recipe is new to me and couldn't be easier for a delicious bar cookie. Brad walked in as they were coming out of the oven and said, "It smells just like Christmas!"
Line a 15x10" pyrex baking dish with foil. Spray the foil with cooking spray. Then line the pan with graham crackers. Break them to fit the edges, and cover the bottom. Sprinkle about 3 cups of miniature marshmallows over the graham crackers.

In a saucepan, combine:
3/4 c. butter
3/4 c. brown sugar
1 t. cinnamon
Cook until sugar is dissolved. Stir in 1 t. vanilla. Pour mixture over the marshmallows.

Sprinkle with 1 cup of sliced almonds and 1 cup of coconut. Bake for 15 minutes at 350.

Let cool. Cut into squares, then cut squares in half diagonally.

You had me with these right up to the coconut -- not a fan. As chief guru of the cookie world - any thoughts on a susbstitute for the coconut?

Thank you for sharing your cookie recipes. I made several that you posted last Christmas that were a hit.
This recipe looks yummy, did you mean to say "couldn't be easier...."?

Judy, how about the almonds and a few chocolate chips. Or TOFFEE chips (Heath)!!!
