
I tried a new "California Citrus Rub" for dinner last night with two tilapia fillets. It was delicious. The citrus rub contains: black pepper, lemon peel, orange peel, granulated garlic, white sugar, crushed red pepper, citric acid and parsley.
Heat 2 T. of olive oil in a skillet. Dip two tilapia fillets in flour, shaking off any excess.
Cook tilapia in oil for about 3 minutes on each side, first sprinkling each side generously with the rub. Remove fish from skillet to the plate. Add two T of lemon juice to skillet, stirring to get up any brown bits from bottom of pan. Add 1 T. of butter, and cook for another minute to make a lemony sauce to pour over fish. Delicious! Just the right amounts of salty, sweet, spicy, and tangy with a little heat!
