Preheat oven to 400, and spray a baking sheet
Slice Zucchini (1 for every two people)
Toss in a little olive oil
Mix 1/2 cup of panko with 1/2 c. shredded parmesan
Coat zucchini with crumb-cheese mixture, in a single layer on baking sheet and sprinkle remaining mixture on top. Bake 25 minutes until crunchy.
A couple people have asked me what the rainbow cupcakes look like on the inside. Those nice even layers of batter you spread in the cupcake wrapper, do not rise in even stripes like they look from the sides. But they are beautiful inside.
