Leprechaun Cupcakes


These turned out just as I hoped! They make me laugh! We're getting ready for tomorrow with lots of fun St. Patrick's Day food!

Frost the regular size cupcakes green. Frost the same number of mini-muffin tin cupcakes a light peach, and cutting an angle off the bottom, sit them on top of the larger cupcakes to make the heads. The eyes are mini-chocolate chips, and the noses and ears are pink jelly-bellies. Frost orange hair and beards. The arms are a green Twizzler (wrapped around the head) with jelly-belly hands, and green frosting covering the "shoulders".

For the hats, cut the bottoms off ice cream cones, and separate Oreos into two cookies, scraping off the filling. Dip the Oreo half and the cone into melted green candy melts. Place cone (cut side down) on top of cookie. Cut three mini hearts from a gumdrop for the shamrock. When hats are dry (chill in fridge), attach to head with more orange frosting!

I only made three leprechauns because they are just to decorate a plate of GREEN Velvet cupcakes! Have a lucky St. Paddy's Day! Stay turned for the whole dinner menu and photos on Sunday!

Being from Dublin, GA, I know a good leprechaun when I see one and these are three of the best!
