What to Make for Dinner?

Ever have those nights when you work late, or are too tired to think about cooking or planning a meal? Here is a go to easy dinner solution. Keep a bag of Trader Joe's Mandarin Orange Chicken in the freezer. It is good just as it is with a veggie and rice, or tossed in a salad with whatever you have in your produce drawer.


Last night we had some tossed in a spinach salad with mangos, oranges, red onion, and a quick citrus vinaigrette made with mandarin olive oil, Sicilian lemon balsamic, a spoon of mustard, and a spoon of honey!
